Cold hiyajiru soup

Ingredients (for 4 servings):

– 1 tbsp Dashi
– 50 g miso paste
– fish (optional)
– 10 g sesame seeds
– 500 ml of cold water
– 1 cucumber
– 3 green onions
– 140 g of silk tofu

Additionally:
– 3 green sheets of shiso (Perilla)
– 4 cups boiled rice

Method of preparation:

1. Boil some rice. In a frying pan, heat the vegetable oil, fry the fish until cooked, tear into pieces.

2. In a pot of water, add the Dashi broth and miso, stir to dissolve the paste.

3. Grind the sesame seeds in a mortar, add to the cold broth.

4. Wash cucumber, clean, cut into thin slices. Cut the green onions into thin rings. Cut tofu into small pieces. Cut thin strips of shiso.

5. Add to the broth cucumber, green onions, tofu and fish, decorate with leaves of shiso. Serve with a bowl of rice.
